The track is transcribed in the original key, D Flat Major, and uses basic major and minor chords D♭ G♭ B♭m E♭m A♭. The harmony employs extended and inverted chords.
The vocals are typed using an optional 𝄠 suboctave clef (the treble clef with the numeral 8 below it). Hozier has a very low voice, there would be no place for the left hand to play if you will play the right hand this low (in the third and second octaves). If you are man, sing the melody one octave lower than written.
"Cherry Wine" is composed with a swung rhythm in triple meter 3/4. I typed the score in 9/8, as I always do with swung triple time. This way it is easier to sightread for beginners. Accent strong beats but do it softly.
A guitar break uses straight rhythm in the first two bars. Listen to the record to hear how Hozier plays it. The false ending of the guitar breaks releases tension so the repeated verse doesn't sound dull after the louder and intense part.
Hozier sings non-staccato. He separates phrases and words as he pleases. You too can play as you please.
Pitch inflections (slurred notes) should be played quietly.
In Hozier's singing you can hear Cercar della nota (search for the note) — a vocal technique of slight appoggiatura from above or below before a needed note. I added only a little bit of appoggiaturas because he takes every note in all his songs after a little bit of searching.
